Dad's Favorite Cherry Pie

I lived with my mother-in-law, the author of this recipe, for a little while after meeting my husband. I learned alot from her about cooking. This pie is her father's favorite (who is still alive and plays one heck of a good game of golf), and it's my favorite too. The crust tastes like butterscotch and it is so rich, it oozes fat & calories. Here is what will probably be your favorite cherry pie if you try it:

    Pie Crust:
  • 1/2 cup butter (use real butter; it makes the recipe better)
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1 1/2 cup flour (I always use unbleached all-purpose)
    Filling:
  • 1 cup sugar
  • 4 tablespoons flour
  • 2 teaspoon corn starch
  • 1/2 cup cherries (2 cans of whole cherries)
    Topping:
  • 1 1/2 cups dried oatmeal
  • 1/2 cup brown sugar
  • 2 teaspoon corn starch
  • 4 tablespoons flour
  • 5 tablespoons butter (again, real butter)

Mix the pie crust ingredients into a thick paste. Put into bottom of greased pie pan and bake at 325 degrees for 15 minutes. Go ahead and mix the topping ingredients well; it will save time.

Mix the filling ingredients well and cook in double boiler until thick (about 5 to 6 minutes). Stir to eliminate lumps. Fold in the 2 cans of cherries. Pour over pie crust. Put topping on top of filling. Bake at 325 degrees for 20 minutes. If it is not completely set after 20 minutes, set let it bake for another 5 minutes and check.

I never really liked cherry pie before I tried this one. This pie will not need any vanilla ice cream to make it sweet; it is already perfect :)
