This is another recipe I got from my mother-in-law. Every Christmas when my husband was a child, she would make this cake, so this is his favorite dessert. The batter is so good that you won't want to make the cake! Now, making this cake has become a Christmas tradition in my house.
- 1 cup butter (use real butter; it is a must!)
- 2 cups sugar
- 4 eggs
- 3 cups flour (I always use unbleached all-purpose)
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup orange juice
- 2 1/2 teaspoons vanilla (again, the real stuff)
- 5 apples thinly sliced
- 1/2 cup sugar & 2 teaspoons cinnamon, mixed well
Cream the butter, sugar & eggs. Sift flour, salt and baking powder. Mix orange juice and vanilla. Alternately add the sifted mixture and o.j./vanilla mixture to creamed ingredients. Put 1/2 batter in well greased & floured tube pan. Add 1/2 of the apples and 1/2 of the cinnamon/sugar mixture. Repeat. Bake at 350 degrees for 1 1/2 hours.
This cake makes a great dessert anytime of year. We have it with coffee some mornings. Try it; you and your family will love it!
